I have an obsession with pasta. If macaroni and cheese had all of the nutrients a human body needs to thrive, I would eat it for every meal. Unfortunately, that is not my reality...but I do have a fairly nutritious recipe for pasta salad that will satisfy all pasta lovers!
One 16-ounce box of whole-grain salad rotini
1 cup of Kraft Italian Olive Oil Vinaigrette Dressing
4 cups of baby spinach
1 thinly-sliced cucumber
1 cup of shaved parmesan cheese
1/2 cup of sliced almonds
Boil rotini for 10 minutes. Drain rotini and let it cool. Toss with 1 cup of Kraft Italian Olive Oil Vinaigrette Dressing. Chill in refrigerator for at least 2 hours. Spread rotini mixture evenly into a large serving dish. Then, layer remaining ingredients in the order listed: 4 cups of baby spinach, 1 thinly sliced cucumber, 1 cup of shaved parmesan, 1/2 cup of sliced almonds. Serve immediately.
